Thankfully, San Franciscans have a superior cream-filled treat to ease their sugar shock: Le Bonta Italiane’s cannoli. Founder Massimo Giusti crafts the Lucca-style sweets from a childhood recipe sourced from his native Italy (he literally tracked down the food truck owner who sold them across from his boyhood school).
In place of the crunchy shell used in most East Coast versions, imagine puffy, sugar-dusted clouds surrounding rich custard. Giusti spiral-wraps dough around a cylindrical mold, deep-fries it until golden brown, then fills it with lemon or chocolate cream.
If you’re craving the traditional (American) ringed variety, he has those, too: Frati are the donut equivalent of a lemon-scented down duvet.
